Italian Soysage with Onions and Peppers

Serves 4

1 tbsp. soy oil
1 cup sliced onions
1 cup sliced mushrooms
1 cup sliced green bell peppers
1 tsp. Italian Herb seasoning*
1 tsp. minced garlic
1/2 tsp. salt
4 soy hot dogs,** quartered
*Spice Islands--oregano, marjoram, thyme, summer savory, basil, rosemary, sage.
**Northern Soy's "Not Dogs" or other brands

Heat oil, then sauté onions, mushrooms, bell peppers and seasonings for 5 minutes.
Add the soy hot dogs and sauté 5 more minutes. Serve hot.
