Tempeh, Lettuce, and Tomato Sandwich

Serves 4

1 tbsp. tamari
2 tbsp. water
1/2 tsp. natural liquid hickory smoke
1/4 tsp. granular garlic
4 (2 oz.) pieces tempeh
2 tsp. soy oil
8 slices whole wheat bread
8 slices tomato
8 pieces leaf lettuce
1/2 cup soy mayonnaise

Mix tamari, water, garlic, and liquid smoke together, then add the tempeh and marinate for a few minutes. Heat oil in a skillet and sauté the tempeh until golden brown on both sides. Add the marinade and cook for several minutes or until the liquid has evaporated. Toast the bread and spread mayonnaise on both pieces. Place tempeh on one piece of bread. Add tomato slices and lettuce leaves, and top with the other slice of bread.
