Boulder, ColoradoRon Pickarski is President and Executive Chef/Consultant of Eco-Cuisine, Inc., which provides food service and food technology consulting services and product development, as well as educational demonstrations and seminars for food service professionals. He is the first professional vegetarian chef to be certified as an Executive Chef by the American Culinary Federation. In 1980, Chef Picarski entered the International Culinary Olympics, held in Frankfurt, Germany, with his unique creations and was the first chef in the history of that prestigious event to win medals with a gourmet vegetarian display composed entirely of plant-based foods. He is now a five-time medal winner at the quadrennial event and some of the medal-winning recipes, as well as many others, are featured in his two cookbooks, Friendly Foods: Gourmet Vegetarian Cuisine and Eco-Cuisine: An Ecological Approach to Gourmet Vegetarian Cooking (Ten Speed Press, Berkeley, CA, 1991, 1995).i
