Salmon Spread

1 pkg (10.5 oz) silken tofu
2 Tbs lemon juice
1 pimiento (or freshly roasted sweet red pepper)
1/2 tsp dill bones removed
Parsley sprigs (optional)
1/4 cup chopped green onions
1 can (14.75 oz) salmon, drained, skin & larger

Put the tofu, lemon juice, pimiento and dill into a blender container and blend until smooth.

Add the green onions and salmon and blend again until smooth. Serve in a dish garnished with parsley, if desired.

Yield: 2-1/2 cups (10 servings) Serving size: 1/4 cup

Per serving: 78 calories, 3 g total fat (0.7 g sat fat), 10 g pro, 1 g carb, 0.2 g fiber, 244 mg sodium, 23 mg cholesterol
