Basic Cheese Toasties

1 pkg (10.5 oz) silken tofu
1 Tbs nonfat mayonnaise
1 tsp Worchestershire sauce
1/4 tsp garlic powder
1/4 tsp paprika
1/8 tsp Tabasco
4 oz (1 cup) Cheddar-style soy cheese, grated
(Small bread slices, such as cocktail rye)

Whirl the tofu, mayonnaise, Worchestershire sauce, garlic powder and Tabasco in a blender until smooth.

Add the Cheddar-style soy cheese and whirl until smooth, stopping to scrape down sides as needed.

Spread the cheese topping onto bread and place on a baking sheet. Broil 4 to 5 minutes, until starting to brown.

Yield: 1-1/2 cups (12 servings) Serving size: 2 Tbs spread

Per serving (without bread): 40 calories, 2 g total fat (0.2 g sat fat), 4 g pro,

1 g carb, 0 g fiber, 108 mg sodium, 0 mg cholesterol

Exchanges: 1/2 medium-fat meat

Veggie Cheese Toasties ­ Add 1/2 tsp celery seed and 2 Tbs each very finely chopped zucchini, green bell pepper, green onions and carrots to the blended mixture.

Italian Cheese Toasties ­ Add 1/4 cup chopped fresh parsley, 1/2 tsp oregano, 1/4 tsp thyme, 1/4 tsp basil and 1 finely chopped medium tomato to the blended mixture.
