SOY PROTEIN IN SNACK FOODS

Soy protein is a cost-effective way to reduce fat and enhance the nutritional profile of many snack foods. A few of these include crackers, cookies, candy ingredients, breakfast/energy bars, energy/food drinks, snack chips, peanut butter spreads, soynut butter and jerky.

Soy Products Used

Soy flour and grits help promote moisture retention, improve color, extend shelf life and, when used in combination with other ingredients, can help lower production costs.

Soynuts offer a healthy alternative crunch as a topping or ingredient while naturally increasing the protein content of the snack item.

Isolated soy protein and soy protein concentrates are used as protein supplements in snack products because of their high protein content, dispersibility and low flavor profile.

Directions:

1. Combine rolled oats, textured soy protein concentrate, almonds, coconut, functional soy protein concentrate, cinnamon and nutmeg.

2. Combine the rest of the ingredients, except for chocolate chips, and heat to 120°F; incorporate with the dry mix.

3. Combine the frozen chocolate chips with the mixture and compress at once.
