
Taco Salad
This is fast and easy because it uses packaged taco seasoning, but you can substitute the Taco with Beans or Sloppy Josés recipe for the seasoning mix and meat analog to lower the sodium.
1 pkg (14 oz) beef-flavor GimmeLean®
1 pkg (1.25 oz) taco seasoning mix
3 quarts shredded lettuce 6 oz baked tortilla chips
3/4 cup (3 oz) shredded Jalapeño soy cheese
3 medium tomatoes, chopped
6 Tbs chopped green onion
Brown the soy "ground meat" in a nonstick skillet. Stir in the taco seasoning and whatever water the seasoning package specifies. Cook according to package directions.
Arrange 2 cups of shredded lettuce on each of 6 serving dishes. Top with about 1/2 cup of the taco mix, 2 Tbs shredded cheese, 1/2 chopped tomato, and 1 Tbs green onion. Surround with 1 oz baked tortilla chips (about 9 chips). Serve at once.
