
Roasted Tempeh Bits
These cubes are especially good in a salad of mixed greens and grilled vegetables.
8 oz steamed tempeh in 1/2" cubes
2 Tbs lower-sodium soy sauce
1 tsp sesame oil
1/2 tsp dried tarragon
1/2 tsp garlic powder
1/4 tsp black pepper
Preheat the oven to 350°.
Put the tempeh cubes in a medium bowl.
In a small bowl, whisk together the soy sauce, sesame oil, tarragon, garlic powder and black pepper. Pour over the tempeh cubes and toss to coat well.
Put the cubes onto a nonstick or lightly oiled baking sheet and bake at 350° for 20 minutes, stirring once. Cool the cubes and toss into a mixed green salad. Store leftover cubes in the refrigerator.
