Miso Salad Dressing

2 Tbs miso
1/3 cup water
1/4 cup soy oil
3 Tbs rice vinegar
1 tsp honey
1/4 tsp dry mustard
1 Tbs fresh tarragon (or 1 tsp dried tarragon)

Stir miso and water together until smooth. Add remaining ingredients and whisk together until they are blended. Serve over salads or vegetables.

Yield: 1 cup (8 servings) Serving size: 2 Tbs

Per serving: 72 calories, 7 g total fat (1.0 g sat fat), 1 g pro, 2 g carb, 0 g fiber, 226 mg sodium, 0 mg cholesterol

Exchanges: 1-1/2 fat

Asian Dressing ­ Replace 1 Tbs of the soy oil with 1 Tbs sesame oil in the above recipe. Add 1 Tbs soy sauce, 1 clove minced garlic, and 1 tsp minced fresh ginger.
