
Autumn Fruit Slaw
This is a very pretty salad if you play with the colors a little use a mixture of red and green apples and grapes, or some red cabbage.
1 pkg (10.5 oz) silken tofu
1/4 cup undiluted apple juice concentrate
2 Tbs honey
2 Tbs lemon juice
1/4 tsp ground nutmeg
4 cups finely shredded cabbage
1 cup seedless grapes
1 pear, cored & chopped
1 apple, cored & chopped
Make the dressing by whirling the tofu, apple juice concentrate, honey, lemon juice and nutmeg in a blender container until very smooth.
In a serving bowl, mix the cabbage, grapes, pears and apples together. Pour the dressing over the salad and toss well, being sure the apples and pears are coated to prevent browning. Serve well chilled.
