Fresh Green Soybeans

These are soybeans that are harvested just prior to maturity. Cooked and lightly salted, these little green beans are a popular snack in China. Their light, fresh taste and crisp texture also make them a delicious addition to any meal.

Storing fresh soybeans

These beans are often sold in the freezer section of natural foods stores, and should be stored in the freezer until ready to use. Fresh beans, purchased still in the pod, should be cooked and stored in the refrigerator.

Cooking basics

Although the beans may be removed from their pods before cooking, the beans slip from the pods more easily if the whole pods are lightly cooked first. Put the pods into a pot and cover with water. Bring the water to a boil, simmer 5 minutes, then drain. When cool enough to handle, remove the beans from the pod. The beans may be eaten as a snack directly from the pod, or the shelled beans may be simmered an additional 10 to 15 minutes for use as a side dish.
