Vanilla Pudding
1/2 cup sugar
2 Tbs cornstarch
1 1/2 cups plain soymilk
1 tsp vanilla extract
Stir the sugar and cornstarch together in a medium saucepan. Whisk in the soymilk. Cook, stirring, over moderate heat until the mixture comes to a boil and thickens. Remove from heat, stir in vanilla and pour into 3 individual serving dishes. Chill well before serving.Yield: 3 servings. Serving size: 1/2 cup.
