Vanilla Pudding

1/2 cup sugar
2 Tbs cornstarch
1 1/2 cups plain soymilk
1 tsp vanilla extract

Stir the sugar and cornstarch together in a medium saucepan. Whisk in the soymilk. Cook, stirring, over moderate heat until the mixture comes to a boil and thickens. Remove from heat, stir in vanilla and pour into 3 individual serving dishes. Chill well before serving.

Yield: 3 servings. Serving size: 1/2 cup. Per serving: 210 calories, 2 g total fat (0.3 g sat fat), 5 g pro, 44 g carb, 53 mg sodium,
0 mg cholesterol.
