Creamy Italian Dressing

1 cup plain soymilk
1 (12 oz.) package firm tofu
2 (0.7 oz.) packages dry Italian dressing mix

Mix all ingredients in blender or food processor until smooth and creamy. Refrigerate.

Yield: 2 1/2 cups. Serving size: 1/4 cup (4 Tbs). Per serving: 40 calories, 1 g fat (0 g sat fat), 3 g protein (3 g soy protein), 5.5 g carbohydrate, 554 mg sodium, 0 mg cholesterol, 0 g dietary fiber.
