HEALTHY MEN CAN RECEIVE HEART BENEFIT FROM SOY PROTEIN

A new study in Australia has found that even healthy men can benefit from increased amounts of soyfoods in their diets.

One hundred and eight healthy men were enrolled in a trial conducted by a team of six researchers at medical schools and hospitals in Clayton and Victoria, Australia. The men, whose ages ranged from 50 to 75 years, received either soy protein isolate or a casein placebo . The soy protein isolate contained 40 grams of soy protein and 118 milligrams of isoflavones. After the three-month test period, it was found that the men who consumed soy protein had lower blood pressure and lower levels of cholesterol and also of triglycerides, which are fats that can cause heart problems when too high.

SOY'S POSITIVE ROLE IS CITED AT CORNELL

A Cornell University medical director says it's, "critically important" for people to be pro-active about nutrition and urges more soy in diets to help prevent illness and disease.

"Compounds called isoflavones contained in soy may help lower cholesterol, build bone mass, and possibly even prevent the accumulation of brain plaques that lead to Alzheimer's disease, according to a number of recent reports," a Cornell publication, the "Food and Fitness Advisor," says in its September issue. "Soy isoflavones may also have potent effects against breast cancer."

Dr. Mitchell Gaynor, medical director of the Center for Complementary and Integrative Medicine at the New York Weill Cornell Medical Center, said: "One in every 2.5 million Americans at some point in their lives are going to hear the words 'you have cancer,'" he said. "While there are genetic and environmental factors that cause cancer, a lot of people are not getting enough of the nutrients that nourish the immune system and help other mechanisms that fight cancer."

_ Marinated Soybeans & Vegetables

1 (16 oz.) bag Baby Broccoli Blend (includes green soybeans)
2/3 cup chopped green onion
1/2 cup chopped red onion
2 large tomatoes, chopped
1 cup bottled reduced fat Italian dressing

Mix all ingredients in bowl and stir. Marinate in refrigerator at least 4 hours before serving.

Yield: 6 cups. Serving size: 1 cup. Per serving: 156 calories, 9.5 g fat (1 g sat fat), 5 g protein (3 g soy protein), 14 g carbohydrate, 310 mg sodium, 0 mg cholesterol, 3.5 g dietary fiber.

_ Three-Bean Chili

1 1/2 cups chopped onion
2 tsp soybean oil
1 (15 oz.) can white soybeans
1 (15 oz.) can black soybeans
1 (15 oz.) can red beans
2 (14.5 oz.) cans diced tomatoes
1 (15 oz.) can tomato sauce
1/2 cup brown sugar
1/2 tsp salt
1 tsp black pepper
2 tsp ground cumin
2 Tbs minced garlic
1 Tbs chili powder

Heat oil in large pot over medium-high heat. Cook onions until soft. Drain and rinse three beans and add to onions. Stir in all remaining ingredients. Bring to a boil and then reduce heat to low and simmer for 30 to 45 minutes.

Yield: 9 cups (6 servings). Serving size: 1 1/2 cup. Per serving: 360 calories, 7 g fat (1 g sat fat), 20 g protein (12 g soy protein), 55 g carbohydrate, 1423 mg sodium, 0 mg cholesterol, 12 g dietary fiber.

_ Quick Mix Cookie Bars

2 (18 oz.) packages refrigerated chocolate chip cookie or oatmeal chocolate chip, slice and bake cookie dough
1 (12 oz.) package firm silken tofu
2 eggs
1 cup sugar
1 tsp vanilla

Preheat oven to 350 degrees F. Soften one roll of cookie dough. Spray the bottom of a 9" x 13" baking pan with non-stick spray. Line the bottom with the softened cookie dough, spreading to all sides. In food processor bowl, combine tofu and remaining ingredients until smooth. Spread over cookie dough. Drop second roll of cookie dough by teaspoon on top of filling. Bake for 40 to 45 minutes. Makes 36 bars.

Yield: 36 bars. Serving size: 1 bar. Per serving: 155 calories, 6 g fat (2 g sat fat), 2 g protein (0.7 g soy protein), 23 g carbohydrate, 65 mg sodium, 18 mg cholesterol, 0 g dietary fiber.
