For more than four years, the Indiana Soybean Board has been the sole sponsor of the Soyfoods USA newsletter. They had the courage and wisdom to publish this newsletter in the first place, and they will hopefully continue to sponsor us in the future. But we can ask for only so much from a single sponsor, especially when we we want to do more for our readers and include things like surveys in the newsletter. CHOCOLATE SOY TREATS WITH A HEALTH KICK!

Every day I like to have a sweet treat or fun food. You know... a food that does not really offer much in the way of healthy nutrients, but tastes great and makes me feel great! And probably 70 percent of the time, it is a chocolate treat!
So when these treats have real nutrition benefits added, I feel even better because I am getting the pleasure and enjoyment of something fun and chocolate along with vitamins, minerals and dietary fiber. And now, I can even get my daily dose of soy protein with a sweet chocolate treat!
Absoylutely Delicious Pudding
Quick and easy, just grab a container of this thick, rich and creamy pudding from Prevention Foods in Atlanta, Georgia. With these great tasting, ready-to-eat soy puddings, you get not only great chocolate flavor, but a whopping 7 grams of soy protein and 2 or 3 grams of dietary fiber. (We all need to eat more fiber!)
Absoylutely Delicious refrigerated pudding cups are made from whole soybeans and have no added fat; the 3 or 4 grams of fat per 5 ounce servings come from the soybean naturally. Other ingredients include corn syrup, sugar, nonfat milk, gelatin, cornstarch and flavorings.
They are available in 4-packs by an internet grocer and can be delivered directly to your home. Some health food stores in Atlanta are currently offering Absoylutely Delicious Puddings. With the great taste and nutritional value these puddings offer, they'll probably be available more widely soon.
In addition to chocolate, Absoylutely Delicious Puddings come in three other flavors: vanilla, cappuccino, and pumpkin pie. All flavors are a nutrient dense sweet treat, just like the chocolate.

These great tasting chocolate crunchies are a mixture of dry-toasted soybeans, chocolate chips, sunflower seeds, pumpkin seeds, raisins, expeller-pressed canola oil and sea salt. Chocolate Carousel Soynutty Crunchies resemble a trail mix, offering both a sweet (chocolate chips!!) and salty (seeds and soynuts) flavor. This product is packed in 8-ounce resealable stay-fresh bags. The Organic Garden, a division of American Health and Nutrition, Inc. in Ann Arbor, Michigan manufacturers and sells this product, which is available through mail order and in some health/natural food stores.

SOY SWEETS & TREATS RECIPES
1. Amaretto Cheesecake Delite
(From the Ohio Soybean Council)Chocolate Cookie Crust
1 1/2 cups chocolate cookie crumbs
3 tablespoons chopped almonds
2 tablespoons soy oilAmaretto Filling
1 package (12.3 oz) silken tofu, soft
16 oz. reduced fat (Neufchatel) cream cheese, softened
1 1/2 cups sugar
6 egg whites
4 whole eggs
1/4 cup Amaretto liquor
2 tablespoons vanilla
1 tablespoon almond extractGlazed Almond Topping
2 tablespoons sugar
3/4 cup sliced almondsIn a small bowl, combine all ingredients for the crust. Press evenly into the bottom of a 9-inch springform pan. In a food processor, combine the tofu and cream cheese until smooth. Transfer tofu mixture to a large bowl, add sugar and mix thoroughly. Add egg whites and whole eggs and continue to mix until well blended. Add Amaretto, vanilla and almond extract. Pour over crust in springform pan. Bake at 300 degrees F for 1 hour and 15 minutes until center of cheesecake is no longer wet looking.
Glazed Almond Topping
Heat sugar in a nonstick pan until sugar turns a golden brown. Toss almonds in sugar to coat. Spread almonds on wax paper and cool. Break apart when cooled and arrange almonds around edge.Yield: 14 slices Serving size: 1 slice per serving: 363 calories, 17 g fat (6 g sat fat), 11 g protein (1.5 g soy protein), 39 g carbohydrate, 275 mg sodium, 90 mg cholesterol, 1 g dietary fiber.
2. Soynut Trail Mix
1 cup roasted, salted soynuts
1 1/2 cups candy-coated soynuts
1 cup oat-ring cereal
2 cups frosted mini wheat squares cereal
1 cup raisins
1 cup dried cranberries
1/2 cup dried cherriesMix all ingredients in large bowl or container. Keep tightly closed in container or zippered plastic bag.
Yield: 8 cups. Serving size: 1/2 cup. Per serving: 170 calories, 5 g fat (2 g sat fat), 5 g protein (5 g soy protein), 30 g carbohydrate, 65 mg sodium, 1.5 mg cholesterol, 3 g dietary fiber.
3. Super Crunchy Caramel Corn
1 cup brown sugar
1/4 cup light corn syrup
1/2 cup margarine
1/4 tsp salt
1/4 tsp baking soda
1 tsp vanilla extract
3 quarts popped corn
1 cup roasted soynutsMix brown sugar, corn syrup, margarine and salt in large microwave safe bowl. Bring to a boil; boil 2 minutes on high. Add baking soda and vanilla extract, stirring well. Pour mixture over popped corn and soynuts in a large microwave-safe cooking bag. Shake well. Fold down top of bag and place in microwave oven. Cook on high for a total of 3 minutes; remove bag at 1 minute intervals and shake well. Pour onto cookie sheet and cool. Store in airtight container.
Yield: 3 quarts. Serving size: 1 cup. Per serving: 244 calories, 10 g fat (2 g sat fat), 5 g protein (3 g soy protein), 34 g carbohydrate, 225 mg sodium, 0 mg cholesterol, 2.5 g dietary fiber.
