PURDUE STUDENTS CREATE NEW SOY GELATIN DESSERT

The newest use for soybeans shimmered and shook all the way to the winners circle recently at the fifth annual Soybean Utilization Contest, sponsored by the Indiana Soybean Board and Purdue University. The winning entry was NuSoy Gel, a gelatin-like soy protein dessert.

NuSoy sets up like commercially available gelatin desserts and it doesn't melt in your mouth as quickly as other gelatin products. Faye Mulvaney, the co-inventor of NuSoy, explained that "It's got the flavor of the gelatin products that we've all grown up with, but it also packs a lot of health benefits, too"

NuSoy contains soy isoflavones, and as an added benefit, it also contains 100 percent of the Recommended Daily Allowance of vitamin C. The gelatin desserts currently on the market contain no soy isoflavones or vitamin C.

Typically, gelatin is made from animal-protein collagen, which comes from animal skin, bone and connective tissue. The students' gel, which they made in cherry, orange and lemon flavors, is made of water, fructose, high-gelling soy protein and carrageenan, from seaweed.

The idea developed as the students thought about hospital patients. "The current gelatin dessert served in hospitals doesn't offer many nutrients. Our gelatin provides important nutrients," Mulvaney says.

ILLINOIS STUDENTS CREATE NEW SOY SHAKE

In another soy contest, four undergraduate students at the University of Illinois were recognized for their idea: "Yo-So! The Non-Dairy, Yogurt-Cultured Soy Drink Sensation". Their entry was one of 12 in the SoyLutions '99 contest sponsored by the Illinois Soybean Association (ISA) and the Illinois Soybean Checkoff Board (ISCB) designed to give Illinois university students the opportunity to create new uses and new marketing ideas for soybeans.

Yo-So, a fruit-flavored soymilk drink promises to bring the health benefits of soy to main-stream consumers, thanks to a new product concept proposed by four University of Illinois students as part of the state-wide contest.

"By associating soy products with nutrition and taste, Yo-So! will help to promote the overall acceptance and incorporation of soy into the American diet," says Ken Elmore, chairman, Illinois Soybean Checkoff Board.

NEW SOYFOODS TO DISCOVER

Earlier this May I headed to Chicago to scope out new soyfoods at the Food Marketing Institute's 62nd Annual Supermarket Industry Convention and Educational Exposition. Naturally, in addition to all things chocolate, I sampled the newest soyfoods on the market. Keep this list and watch for these items to show up over the next six months at your favorite supermarket, health or natural food store.

1. BUFFALO WINGS from Morningstar Farms. Delicious, spicy, meatless hot wings made from both soy protein concentrate and isolate. Comes in a frozen 10.5-ounce box with about 16 hot wings. Simply heat in oven for crispier wings. Can be cooked in microwave also.

Nutrition facts: 5 wings have 200 calories, 9 g fat, 0 mg cholesterol, 3 g fiber and 13 g protein.

2. DIET BALANCED by American Natural Snacks. Look out Ultra Slim Fast! This diet shake is dairy-free, lactose-free, lower in fat (3 g vs 1 g) and is made from whole soybeans and soy protein isolate. Also contains isoflavones. Available in 11-ounce cans - chocolate royale and french vanilla.

Nutrition facts: 1 can contains 180 calories, 1 g fat, 0 cholesterol, 3 g fiber, 10 g protein and fortified with at least 35% of 25 vitamins and minerals.

3. DOWN HOME BARBEQUE from Dixie Diner's Club. This comes as close to the real thing as you have ever tasted! A delicious barbeque sauce combined with a truly realistic meat substitute that meets the new proposed FDA health claim for soy protein. Packed with isoflavones. Look for Carver's Choice Cuts & Sauce at your health food store or order directly from their Web site.

Nutrition facts: 1 serving provides 106 calories, 1.7 g fat, 0 mg cholesterol, 2.8 g fiber and 7.5 g protein.

4. HICKORY SMOKED TOFU RELLA HEALTHY CHEESE ALTERNATIVE by Rella Good Cheese Co. The newest flavor in a line of great tasting cheeses made with organic tofu. Tofu Rella comes in 8-ounce refrigerated packages. May be found in the cheese case, produce area or even the health/food specialty section of larger supermarkets.

Nutrition facts: A 1-ounce serving has 80 calories, 5 g fat, 0 gmg cholesterol and 6 g protein. Also enriched with 10% Vitamin A and 20% calcium.

5. ORGRAN STONEGROUND PASTAS WITH SOY From Cemac Foods. High protein, dry pastas in 7 to 8.8-ounce bags. Made with part soy flour. Varieties include garlic and parsley spirals, tomato and basil spirals, and split pea and soy pasta shells.

Nutrition facts: 1 serving of cooked pasta averages 150 calories, 5 g fat and 17 g protein.

6. SILK SOYMILK CREAMER by White Wave. Along with their line of refrigerated soy milks, White Wave now offers a delicious coffee creamer made from soymilk, canola oil, sugar and flavorings. It comes in 16-ounce refrigerated milk-like containers.

Nutrition facts: One tablespoon contains 15 calories, 1 g fat, 0 mg cholestrol, 1 g carbohydrate.

7. SMART DELI STICKS by Lightlife. New meatless deli product for sandwiches, subs or pizza. Deli Sticks have terrific taste and texture. Available in 7-ounce sticks. Pepperoni and Soylami flavors. Both are made from soy protein isolate and seasonings.

Nutrition facts: Pepperoni has 48 calories per ounce (1/7th of package), 0 g fat, 0 mg cholesterol and 10 g protein. One ounce Soylami has 40 calories, 0 g fat, 0 mg cholesterol and 9 g protein.

8. SOY EASY by Melissa's. A spread made from tofu and seasonings much like hummus. Packaged in 7.6-ounce refrigerated containers. Found in the produce department near other Melissa's items. Flavors include Mediterranean Olive, Roasted Red Pepper and Slow Roasted Garlic.

Nutrition facts: About 110 calories and 3 grams fat in 2 tablespoons.

9. SOY TACO by Frieda's Inc. Just like taco meat you make from ground beef, but much healthier and easier! Just heat and serve. Soy Taco is made from soy concentrate, textured vegetable protein and spices, and it tastes great!! Available in the refrigerated case or produce area. Can be frozen after purchasing.

Nutrition facts: A 1-ounce serving contains 50 calories, 3 g fat and 4 g protein, so a typical 3-ounce serving on a flour tortilla or taco shell will give you a hefty 12 grams soy protein.

10. THE ULTIMATE PROBAR from Galaxy Foods. An incredibly tasty 1.5-ounce protein bar with great texture and mouth feel. Two flavors, Chocolate Fudge and Lemon. Lactose-free. 11. VEGGIE TURKEY SLICES and VEGGIE CHILI from Yves Veggie Cuisine. New refrigerated convenient soy entrees. Veggie Turkey Slices are meatless, nitrite-free and fat-free deli slices. Made from soy protein isolate, wheat gluten and seasonings. Comes in 5.5-ounce packages. Veggie Chili comes in a 10.5-ounce refrigerated package. Heat and serve item is ready in 3 minutes. Serves one. Made with Veggie Ground Round, a textured soy and wheat protein meat alternative.

KIM'S SUMMERTIME SOYFOOD RECIPES

SOYNUT TRAIL MIX
Great for those summertime hikes and trips to the park.

1 cup roasted, salted soynuts
1 1/2 cups candy-coated soynuts
1 cup oat-ring cereal
2 cups frosted mini wheat squares cereal
1 cup raisins
1 cup dried cranberries
1/2 cup dried cherries

Mix all ingredients in large bowl or container. Keep tightly closed in container or zippered plastic bag.

Yield: 8 cups. Serving size: 1/2 cup. Per serving: 170 calories, 5 g fat, 2 g sat fat, 5 g protein, 30 g carbohydrate, 65 mg sodium, 1.5 mg cholesterol, 3 g fiber

 

KEY LIME CHEESECAKE
A refreshing dessert for barbecues and cookouts.

1 box (11-12 oz) no-bake cheesecake mix
2 Tbs sugar
1/3 cup margarine, melted
1 package (12 ounces) silken firm tofu
5 Tbs fresh or bottled lime juice
2 Tbs fresh lime zest

Make crust with crumb mixture from cheesecake mix, sugar and melted margarine. Mix all ingredients in 9-inch pie plate until crumbs are well moistened. Press firmly against sides of pie plate first, using fingers or large spoon to shape edge. Press remaining crumbs firmly on bottom using hands or measuring cup. Blend filling mixture with silken tofu, lime juice and lime zest in food processor or blender until smooth and creamy. Filling will be thick. Spoon into crust. Refrigerate at least one hour before cutting.

Yield: 8 pie wedges. Serving size: 1 wedge. Per serving: 290 calories, 14 g fat, 4 g sat fat, 6 g protein, 35 g carbohydrate, 411 mg sodium, 0 mg cholesterol, 1 g fiber

ALMOND CREAM DIP
A delightful dip or sauce for fresh strawberries, peaches and every kind of summer berry!

6 ounces silken firm tofu (about 3/4 cup)
1 package (8 ounces) fat free cream cheese
1 Tbs almond extract
2 Tbs vanilla soy milk
2 Tbs honey

Mix all ingredients in blender or food processor until smooth and creamy. Serve as dips for fresh fruit or spoon over fresh fruit salad.

Yield: 1 1/2 cups. Serving size: 1/4 cup. Per serving: 94 calories, 1 g fat, 0 g sat fat, 7 g protein, 11 g carbohydrate, 240 mg sodium, 0 mg cholesterol, 0 g fiber
