
Peanut Butter Spread
This has a peanutty taste with less fat than peanut butter alone. It makes a great sandwich or a spread for sliced fruit.
1 pkg (10.5 oz) silken tofu or 8 oz regular tofu
6 Tbs peanut butter or soynut butter
Put tofu and peanut butter into container of a blender or food processor and whirl until smooth. Stop to scrape down sides as needed.
Note: You can add mashed or grated fruits and vegetables to this recipe if you like. Bananas, applesauce, frozen juice concentrate, shredded carrots, raisins or other dried fruit are all good.
Yield: 1-1/4 cups (10 servings) Serving size: 2 Tbs
