Grilled Soy Cheese

This is a basic grilled cheese have fun with the recipe by varying the flavor of the cheese and using different add-ons.

2 slices whole wheat bread
1 tsp liquid or tub margarine
1 tsp mustard
2 rings green pepper
1/3 cup shredded Cheddar-style soy cheese
2 slices tomato

Spread one side of each slice of bread with 1/2 tsp liquid margarine. Turn 1 slice of bread margarine side down and spread its other side with mustard.

Top the mustard with half of the shredded cheese and all of the tomato and pepper. Top with the remaining cheese and the other slice of bread, margarine side out.

Put the sandwich on a nonstick griddle or pan and cook over moderate heat until the underside starts to brown and the cheese begins to melt. Turn sandwich over and cook until the bottom is browned and all the cheese has melted.
