
Cornish Pasties
1-1/2 cups diced potatoes
1 cup diced onions
1 cup diced carrots
1 pkg burger mix that calls for 1 pound tofu, such as Fantastic Foods®
1 lb tofu
1/2 tsp dried basil
1/2 tsp dried oregano
1 Tbs dried parsley
3 pkgs (8 rolls each) refrigerated dinner roll dough
Preheat the oven to 350°.
Cook potatoes, onions and carrots in boiling water until just tender; drain well.
Combine packaged burger mix with the tofu, basil, oregano and parsley. Mash them together well. Add the cooked vegetables and mix again.
Prepare pasties one at a time. Use a rolling pin to spread a roll into a 5"-round. Put 1/4 cup of filling in the center and draw the dough up around it, pinching the dough together in the middle to encase filling. Put the stuffed round pinched side down on a nonstick or lightly oiled baking sheet. Continue until all the rolls are used.
Bake at 350° for about 15 minutes, until rolls are golden. Serve warm. Store leftovers in the refrigerator and reheat before serving (or eat them cold if you prefer).
Note: Use Sloppy Joes, taco filling, leftover casseroles, etc., to fill pasties; drain well to remove excess liquid. You can also make your own bread dough and pinch off roll-sized pieces for each pasty.
