
Meatloaf
This recipe uses soybeans or TSP to replace some of the ground meat.
1-1/3 cups cooked soybeans or 1/2 cup dry TSP
1-1/2 lbs lean ground beef
3 egg whites
1/4 cup chopped onion
1 cup skim milk
1 tsp salt
1/2 tsp garlic powder
1/2 tsp oregano
1 Tbs Worcestershire sauce
1/2 tsp ground pepper
1/2 tsp dry mustard
Mash soybeans in a food grinder, food processor or blender. Mix thoroughly with the ground beef. (If using TSP, rehydrate with 1/2 cup boiling water and let sit 5 minutes before mixing with ground meat.)
Add the egg whites and onion and mix well. Add the remaining ingredients and combine thoroughly.
Place mixture into a loaf pan and bake at 350° (no need to preheat) for 1 to 1-1/2 hours, until cooked through.
Yield: 1 loaf (12 slices) Serving size: 1 slice
