A Variety of Choices

 

The goals of Simply Soy are to inform consumers of the health benefits of soybeans and to share easy, tasty and healthful recipes with them.

The cookbook was prepared by two registered dietitians, Cheryl Sullivan, M.A., R.D., and and Kathy Rhodes, Ph.D.,R.D., as a user-friendly guide to soyfoods. Most of the recipes were developed especially for use in the cookbook, but some have been taken from publications by soybean associations from around the country.

Cheryl Sullivan has her own private nutrition consulting practice, Sullivan Nutrition, Inc. She teaches a popular series of community education classes, including one on cooking soyfoods. She has prepared soyfoods for a research study run by Dr. Susan Potter at the University of Illinois.

Kathy Rhodes is a cardiovascular nutritionist in the Preventive Cardiology Program at the University of Michigan. She is coauthor of the High Fit - Low Fat Vegetarian cookbook. She has been cooking with soy for more than 18 years and has taught cooking classes featuring soy for the past eight years.

Soybean producers funded the development costs of the original cookbook through the Michigan Soybean Promotion Committee. This Web site is funded by the Indiana Soybean Board.
