
Vanilla Pudding
1/2 cup sugar
2 Tbs cornstarch
1-1/2 cups plain soy milk
1 tsp vanilla extract
Stir the sugar and cornstarch together in a medium saucepan. Whisk in the soy milk.
Cook, stirring, over moderate heat until the mixture comes to a boil and thickens. Remove from heat, stir in vanilla and pour into 3 individual serving dishes. Chill well before serving.
