Spice Drop Cookies

1 cup brown sugar
1/4 cup soy oil
1 jar (2.5 oz) prune baby- food or 1/4 cup purée
2 egg whites
1/2 cup applesauce
1 tsp vanilla
1 cup cooked soybeans, rinsed, drained & mashed
2 cups flour (may use all or part whole wheat)
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1 cup oats
1 cup raisins

Preheat the oven to 375°.

Combine the brown sugar, oil, prune babyfood, egg whites, applesauce and vanilla in a large mixing bowl. Beat together well with an electric mixer. Beat in the mashed soybeans.

In a medium mixing bowl, sift together the flour, baking powder, cinnamon, nutmeg, cloves and ginger. Stir them into the soybean mixture.

Stir the oats and raisins into the dough.

Drop the dough by rounded teaspoonfuls onto a nonstick (or lightly greased) baking sheet. Bake at 375° for 10 minutes, until firm and lightly golden.

Yield: 5 dozen cookies Serving size: 2 cookies

Pumpkin Spice Cookies ­ Substitute mashed cooked pumpkin for the applesauce.
