
Chocolate Chip Banana Cake
2 bananas (about 1 cup mashed)
1/4 cup soy milk
2 egg whites
1 Tbs oil
1/2 tsp vanilla
1/2 cup sugar
1/4 cup rolled oats
1/2 cup all-purpose flour
1/4 cup soy flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup mini chocolate chips
Preheat the oven to 350°.
Put the bananas, soy milk, egg whites, oil and vanilla in a blender container and blend well. Pour into a medium mixing bowl and stir in the sugar and oats.
In a small mixing bowl stir together the flours, baking powder, baking soda and cinnamon. Add this to the liquid ingredients and stir to blend well. Stir in the mini chocolate chips.
Pour into a greased 9" square baking dish and bake at 350° for about 30 minutes, until cake tests done in center. Cut into nine 3" square pieces to serve.

Banana Cake with Chocolate Frosting Make cake as above, but omit chocolate chips. As soon as cake is removed from the oven, sprinkle with the chocolate chips. Let stand one minute, then use a table knife to spread the melted chips evenly over the top of the cake.
