
Caramel Surprise Pudding
Kids love the surprises in this pudding! The pudding will be even sweeter if you make it with vanilla soy milk.
4 graham cracker squares
1/2 medium banana
2 Tbs brown sugar
3 Tbs cornstarch
1 tsp vanilla
1-1/2 cups plain or vanilla soy milk
1/4 cup fat-free caramel topping
Break each graham cracker square into 4 pieces and cut banana into small chunks. Put them into a medium serving bowl or divide among 4 small serving dishes.
Combine the brown sugar and cornstarch in a medium saucepan. Stir in the soy milk and caramel topping. Cook, stirring, over moderate heat until pudding just comes to a boil and thickens. Remove from heat and stir in vanilla.
Pour the pudding over the graham crackers and bananas and stir well. Cover and refrigerate. Serve the pudding well chilled.
