
Brunch Cornbread
8 soy breakfast links
1 recipe Cornbread (page 34)
Preheat the oven to 400°.
Cook the breakfast links according to package directions in the microwave or nonstick skillet.
Prepare the Cornbread batter according to recipe directions. Coat a baking dish with vegetable oil spray and pour in the batter. Arrange the 8 links in a spoke pattern on top of the batter, gently pressing so that they are about submerged. Bake at 400° for about 25 minutes, until center tests done.
Let the cornbread sit about 10 minutes after removing from the oven. To serve, slice into 8 wedges so that each wedge has a breakfast link in the center.
