
Breakfast Scramble
Scrambled tofu has the look and even the taste of scrambled eggs. It's hard to find something faster, easier or more delicious.
2 tsp onion powder
1 tsp garlic powder
1/2 tsp turmeric
1/4 tsp pepper
1/4 tsp salt
1 tsp parsley flakes, lightly crumbled between fingers
1 lb regular tofu
Combine the onion powder, garlic powder, turmeric, pepper, salt and parsley flakes in a small dish.
Crumble the tofu into a nonstick skillet or a regular skillet coated with nonstick spray. Sprinkle the combined seasonings over it and cook, stirring, over medium heat until heated through.
Note: Quadruple the seasonings and store in a jar. When you want a quick scramble, just add about 5 teaspoons to the tofu in your pan. (For a single serving with 4 oz of tofu, use about 1-1/4 tsp.) This makes a quick lunch or dinner, too!

Jazzy Scrambles - Add sauteed onions, bell peppers and mushrooms to the basic scramble. Adding salsa turns it into a Ranchero Scramble, and you can use it as a burrito filling.
